The INAO is characterized by a dual governance system that brings together public authorities and over 200 professionals within its governing bodies. The Permanent Council, the institution's steering body, defines strategic orientations and decides on the Institute's budget.

The Institute's activity is structured by the sessions of its national bodies, which bring together professionals involved in official signs of quality and origin, qualified personalities (including consumers and researchers), and representatives of the administrations concerned. This original form of dialogue is based on the desire to reach a consensus in the general interest.
