Le cahier des charges, central element of products under SIQO

Productions under signes officiels d'identification de la qualité et de l'origine (SIQO) rely on a cahier des charges.

Transparent for consumers, it includes strict production conditions, validated by the State and regularly checked by approved independent bodies.

The specifications are carried by producers as part of a collective and voluntary approach, with the exception of Organic Agriculture, whose specifications come under a European regulation.

A rigorous process based on the expertise of INAO and professionals

Whether it's a new project or a specification revision, INAO supports producer groups and examines applications. Composed of professionals, the competent bodies examine the proposals made by project sponsors, drawing on the work of investigative commissions made up of committee members. They approve the specifications, setting out production conditions and the production zone where applicable. Thus, the knowledge and experience of SIQO product professionals combined with the skills of the institute's departments guarantee the soundness of the approach.

Producing under SIQO

The signes officiels d'identification de la qualité et de l'origine (SIQO) concern agricultural, forestry, food and seafood products. Whether they are producers or processors in particular, operators can produce an existing SIQO, or initiate a process to have a product recognized.

Defense and management organizations

All origin and quality identification signs, with the exception of Organic Agriculture, are managed by a organisme de défense et de gestion (ODG). The ODG is formed on the initiative of a group of operators, mostly producers and/or processors, ensuring the same production, who join forces within a structure to carry the process of recognizing a quality sign, from drawing up specifications to protecting and promoting the product.

Follow-up procedures

Recognition of a new SIQO product or modification of an existing specification involves a number of stages. Some procedures require public consultations with all stakeholders. The decisions of INAO bodies on these projects are also published on the INAO website.

Official signs identifying quality and origin, a living food heritage

A veritable showcase for French agricultural and food know-how, SIQO products enjoy a strong identity, linked to the terroirs and territories, the taste quality or the environmental guarantee they promise. The long-term future of SIQO products also depends on their ability to adapt. Far from being static, SIQO production is evolving to meet today's challenges, while preserving its characteristics, authenticity and values. INAO is both the guarantor of traditions and customs, and the promoter of innovation. With this in mind, the Institute supports the defense and management organizations (ODG) in their reflections and the concrete implementation of changes to specifications.
