The INAO is characterized by a dual governance system that brings together public authorities and over 200 professionals on its governing bodies. The national committees approve the specifications and their modifications. The Institute's activity is structured by the sessions of its national bodies, which bring together professionals involved in official quality and origin signs, qualified personalities (including consumers and researchers), and representatives of the administrations concerned.
