The INAO is characterized by a dual governance system that brings together public authorities and over 200 professionals on its governing bodies. The national committees approve the specifications and their modifications. The standing committee is responsible for dealing with the day-to-day business of the national committee, and for exercising any powers delegated to it by the committee.

The Institute's activities are structured by the sessions of its national bodies, which bring together professionals involved in official signs of quality and origin, qualified personalities (including consumers and researchers), and representatives of the administrations concerned. This original approach to dialogue is based on the desire to reach a consensus in the general interest.
