This meeting served first and foremost as an opportunity to highlight the role and operations of the National Institute for Origin and Quality (INAO), the umbrella organization for professionals committed to the Signs of Quality and Origin (SIQO). Thanks to its unique governance structure, professionals—in collaboration with the government—play a central role in shaping decisions and setting the direction of policies regarding origin and quality.

The INAO and the ODGs: Addressing the Challenges of Innovation and Adaptation

The INAO’s latest news was presented, with a particular focus on the new tools and procedures made available to ODGs, such as the Innovation Assessment System (DEI). The Roquefort ODG is, in fact, one of the first in the agri-food AOP sector to adopt this system and is currently considering testing a single-milking system.
In the face of current challenges such as climate change and societal expectations, these innovations allow for greater flexibility and responsiveness in adapting the specifications while protecting the appellation’s core identity.

This was followed by lively discussions about the future of the appellation and how to enhance its sustainability. These passionate exchanges underscored the producers’ determination to continue promoting and defending the Roquefort appellation, a flagship of this authentic region of Aveyron.
