All origin and quality identification signs, with the exception of Organic Agriculture, are managed by an organisme de défense et de gestion (ODG). The ODG is formed on the initiative of a group of operators, mostly producers and/or processors, ensuring the same production, who join forces within a structure to carry out the process of recognizing a quality sign, from drawing up specifications to protecting and promoting the product. It is the main contact for operators involved in the process.

The inspection body (OC) carries out the documentary inspection and on your production site, with a view to authorizing operators and in accordance with the procedures set out in the inspection or control plan. Each organisme de défense et de gestion (ODG), which represents the collective of operators who have submitted the specifications proposal, chooses its inspection body. In organic farming, each operator chooses the inspection body.
