Organoleptic Wine Tasting: A List of Defect and Rejection Terms

On November 27, 2025, the National Committee on Designations of Origin for Wines, Alcoholic Beverages, and Spirits approved a document listing terms indicating defects and grounds for rejection.

This document may be updated at upcoming meetings of the national committees for designations of origin for wines, alcoholic beverages, and spirits.

This publication lists the defect terms for wines under the Protected Designation of Origin “Alsace,” “Crémant d’Alsace,” and “Alsace Grand Cru Lieu-dit,” as well as the corresponding rejection criteria for these same appellations during organoleptic evaluations. In this case, the list of rejection criteria is specific and tailored to the quality requirements of each appellation. It determines whether a wine is acceptable for its appellation.

This document also includes a summary of the list of rejection terms for wines with Protected Designation of Origin status (excluding “Alsace,” “Crémant d’Alsace,” and “Alsace Grand Cru Lieu-dit”).
