A visit to Trèfle du Perche producers

Tuesday, December 6, 2022, INAO took part in the signing ceremony for the local "Trèfle du Perche" farmhouse goat cheese supply chain contract, between the Perche et Loir goat cheese association (AFCL) and the Regional Council, in the presence of the Minister for Agriculture and Food Sovereignty, Mr. Marc Fesneau.

Beyond the signing ceremony, which will provide the AFCL with financial resources to develop communication tools and organoleptic analyses, this field visit to a goat farm, Ferme de la Richarderie, was an opportunity to meet producers in this dynamic sector. Indeed, the producers have begun the process of applying to the INAO to have their product recognized as a Protected Geographical Indication (PGI). The meeting provided an opportunity to take stock of the steps taken in this regard.

Trèfle du Perche is an artisan goat's milk cheese in the shape of a four-leaf clover, made from raw milk, ladle-molded, hand-salted and ashed. It is made by eleven producers in Sarthe, Orne, Eure-et-Loir and Loir-et-Cher. The industry is expanding. In 2005, 3.3 tons of Trèfle du Perche were produced. By 2021, production will exceed 40 tonnes.
