Roquefort PDO celebrates its 100th anniversary
It was a weekend of festivities for the town of Roquefort-sur-Soulzon. On June 7 and 8, the emblematic Aveyron village organized the 3rd edition of "Roquefort en fête". The event had a very special flavour, as it celebrated the 100th anniversary of the appellation d'origine of the "King of Cheeses". INAO was of course present for the festivities.

The history of Roquefort cheese goes back centuries. The qualifier "King of Cheeses" originated with Diderot and d'Alembert during the Age of Enlightenment. But it was on July 26, 1925 that Roquefort became the première appellation fromagère d'origine Française to protect itself from the many counterfeits that were multiplying in other regions all the way to international markets!

An emblem of French gastronomy
Over the centuries, the famous cheese has earned its letters of nobility, contributing to the international influence of French gastronomy and ranking 3rd among French PDOs in tonnage marketed.
Roquefort is made from the rich, fragrant milk of Lacaune ewes, perfectly adapted to the environment. The maturing caves dug beneath the eponymous village provide unique conditions for Penicillium roqueforti to propagate in the cheese and reveal its flavor. The slow ripening that follows develops its creamy texture.

A popular celebration of the PDO
The 7 major Roquefort producers and numerous breeders came together to celebrate the centenary, and thousands of visitors turned out, multiplying the village's population fiftyfold.
A host of stands, events and exhibitions were organized throughout the festive village. Tours of the famous maturing cellars, known as "fleurines", were also open to the public keen to learn more about this living culinary heritage, protected by the PDO and which still seems to have many fine years ahead of it.
