Organoleptic testing of wines: a list of defect and refusal words

The Comité national des appellations d'origine relatives aux vins, boissons alcoolisées et spiritueux on November 27, 2025 validated a document listing the words of defect and refusal. This publication lists the wine defect words applicable for the Appellation d'Origine Protégée "Alsace", "Crémant d'Alsace" and "Alsace Grand cru Lieu-dit", as well as the corresponding refusal words for these same appellations, during organoleptic examinations.
