A Label Rouge for "Durum wheat semolina" (n°LA 04/22) [CP] [CP

The "Durum wheat semolina" LA 04/22 has just been recognized as a Label Rouge following the publication of its approval order by the Ministry of Agriculture and Food Sovereignty and the Ministry of the Economy, on December 20, 2023. This is the first semolina and durum wheat-based product to be awarded the Label Rouge. The latter guarantees a product of superior quality compared to a standard product.

Demanding, environmentally-friendly production

Label Rouge durum wheat semolina is produced from selected durum wheat varieties, certified GMO-free. It is a bright yellow semolina with a homogeneous grain size. Intended for pastiers, it enables the production of pasta with perfect baking properties and a firmer texture.
No additives are authorized.

The specifications include agro-ecological provisions for the production of durum wheat:

  • The integration of provisions from the level 2 Environmental Certification referential;
  • The commitment of the entire sector to a virtuous approach to reducing inputs. For example, the use of nitrogen fertilizers is strictly controlled, with a ceiling on the doses applied, and a ceiling is also set on the phytosanitary treatment frequency indicators for phytosanitary treatments;
  • The obligation for producers to justify any treatment (phytosanitary for wheat or soil fertilization) using Decision Support Tools (DST).

The semolina manufacturing process developed is demanding

Wheat grains go through an optical sorter at least 2 times for optimal cleaning.
The grain is polished. This reduces the risk of husk fragments in the semolina and facilitates sorting. This facilitates the gradual shearing of the kernel to obtain the chips that will give the semolina grains.

Production in France

  • 1 year after habilitation: 1,500 tonnes of Label Rouge durum wheat semolina. Or 2,000 tonnes of durum wheat, produced by 50 farmers.
  • Within 5 years: 8,400 tonnes of wheat semolina per year (5% of volumes produced by the semolina industry in France). Or 14,000 tonnes of durum wheat, produced by 210 farmers.
