The official signs of identification of quality and origin (SIQO) face many challenges: volatile markets, ever-increasing climate change, changing societal expectations... Ensuring the sustainability of production, in a global approach including the economy, the environment, the climate and the social dimension, is a primordial challenge for all SIQO sectors, which implies working on the emergence of compromises with methods. INAO is taking action in the field and adapting its procedures to support the adaptation of SIQOs, while creating value for ever more products, territories and sectors. The Assises de l'origine are part of this framework, and will enable players in the Aquitaine region to discuss tomorrow's challenges and opportunities, as well as the means to meet them.
