IGP "Veau d'Aveyron et du Ségala": an industry of excellence committed to sustainability

The regional interprofessional organization for Veau d'Aveyron et du Ségala (IRVA) held its extraordinary and ordinary general meetings on September 15, 2025. The event was an opportunity to present the collective work carried out in recent years to guarantee the sustainability of the industry, in particular the finalization of the new PGI specifications and the issuing of the decree on calf carcass classification.

Finalized this year, the new specifications for the PGI "Veau d'Aveyron et du Ségala" are the fruit of work involving all stakeholders in the industry. It represents the culmination of a project focused on contemporary issues, in particular sustainability: the place of grass, forage autonomy, agro-ecological infrastructures, minimum number of grazing days...

This is the first time that environmental provisions have been included in the specifications of a PGI in the "meat" sector. This year was also marked by the publication of a decree recognizing the classification of carcasses as veal for this product of excellence.

A collective committed to defending and promoting an exceptional product.

In addition to presenting the new specifications, the event provided an opportunity to outline the prospects for the coming year. The industry is keen to get involved in communication initiatives, in conjunction with the INAO-led campaign ("It y a des signes qui ne trompent pas / Signes officiels de confiance") and the quinzaine de la qualité et de l'origine. Professionals are also reflecting on ways to gain greater coverage of production costs through enhanced contractualization. They also wish to work on the evolution of the Label Rouge used alongside the PGI.

With over 370 farms involved in this production recognized throughout the country, and a valuation to match, the "Veau d'Aveyron et du Ségala" illustrates the strength of an industry of excellence: quality, sustainability, territorial anchorage.

Focus on the "Veau d'Aveyron et du Ségala" PGI

The IGP Veau d'Aveyron et du Ségala has benefited from a PGI since 1996. It is a pinkish meat from a calf suckled by its mother from birth until it leaves the farm. Veau d'Aveyron et du Ségala is born and raised in a territory that covers a large part of Aveyron and Tarn, and communes in eastern Lot and Tarn-et-Garonne, and south-western Cantal.
